"SUSHI" ROLLS





INGREDIENTS

  • white bread – crusts removed
  • nutella

or
  • white bread – crusts removed
  • peanut butter
  • jelly of choice


HOW TO MAKE
  1. using a rolling pin, flatten bread
  2. spread approximately 1 tablespoon of desired condiment (nutella, peanut butter, jelly) onto slice of bread
  3. tightly roll up. cut into slices. continue until you have desired amount of "SUSHI" rolls

DIRT CAKE


INGREDIENT
  • 1 large pkg. oreo cookies
  • 3 cups milk
  • 8 oz. cream cheese
  • 1/2 cup butter or margarine
  • 2 small packages instant vanilla pudding
  • 1 cup powdered sugar
  • 1 large container Cool Whip topping
  • 1 tsp. vanilla
HOW TO MAKE

Crush cookies into fine crumbs in the food processor. Put one third of the crushed cookies the bottom of a large sand pail.
In an electric mixer, beat the cream cheese and butter until smooth, then beat in sugar. Fold in whipped topping.
In a separate bowl, mix pudding, milk and vanilla. Fold cream cheese mixture into pudding mixture. Pour one half over cookie layer and sprinkle with remaining a layer of cookie crumbs, place the second layer of cream cheese mixture over the top, and top with the last third of the cookie crumbs. Chill to set.

PEANUT BUTTER AND HONEY LEGO SANDWICHES


INGREDIENTS
  • 5 slices soft whole wheat bread (or desired sandwich bread of choice)
  • peanut butter
  • honey


HOW TO MAKE


Make two peanut butter and honey sandwiches with 4 of the bread slices. Cut off the crusts and cut the sandwiches into 2 x 3-inch rectangles.

With the remaining piece of bread cut out small circles to serve as the top of the lego. I used an apple corer, it makes perfect circles! Swipe the bottom of each circle with a little bit of peanut butter and press them gently on top of the bread. Serve!

CHOCOLATE- DIPPED STRAWBERRY ROSES


INGREDIENT
  • 10-15 medium sized strawberries, cleaned and thoroughly dried
  • 10-15 bamboo skewers
  • 1 1/2 cups pink candy melts
  • 1/2 cup red candy melts
  • Small block of Styrofoam

HOW TO MAKE 

In a small, deep bowl, microwave the pink candy melts for 30 seconds, then stir.  Melt for 30 seconds and stir again.  Continue microwaving for 30 seconds and stirring just until the mixture is fully melted.  Heating it in small spurts will keep you from overheating the chocolate, creating a mottled appearance in the final product. 
Pull the top, green part of the strawberries up and away from the red fruit.  This will keep the greens out of your chocolate, and will also make the greens look more like rose leaves once the strawberries are dipped.  Carefully press the sharp edge of a skewer directly into the center part of the strawberry green, press the skewer in just far enough to hold the strawberry .  Dip the strawberries into the melted pink chocolate.  Turn upside-down and press the sticks upright into the styrofoam, store them here until the chocolate is hardened.
In a small bowl, melt the red candy melts in the same way as you melted the pink candies.  Once melted, transfer to a ziptop bag, snip off a small corner of the bag, and pipe up one side of the strawberry and in a spiral on top.  Allow to harden once more.  Store in the fridge until ready to serve.

BIRTHDAY CAKE IN THE JAR


INGREDIENTS
  • 1 yellow cake mix, prepared according to package directions
  • 1/4 cup rainbow sprinkles
  • 1 jar vanilla frosting, tinted into two colors


HOW TO COOK
Stir the rainbow sprinkes into the prepared cake mix. Bake according to package directions in a 9×13 baking dish. Oncel the cake is cooked and cooled, tear it into large, crumbly pieces.
Assemble the birthday cake in a jar by placing a small amount of cake into the bottom of four small canning jars. Top with one color of frosting, a bit more cake, and the second color of frosting.  Top each jar with a seal and lid. Store in the fridge for up to 2 days.  Serve with candles and a lot of birthday wishes.
Want to send your cake via snail mail? Feel free to pack it tightly and pop it in the mail, but you’ll want to make sure it arrives at your destination within 3 days for maximum freshness.
Makes four cakes in jars.

RAINBOW CAKE IN THE JAR



INGREDIENTS 
  • 1 box white cake mix made according to package instruction
  • Neon food coloring in pink, yellow, green, turquoise, and purpl
  • 3 one-pint canning jars
  • 1 can vanilla frosting
  • Rainbow sprinkles
HOW TO COOK

Preheat oven to 350 degrees. Thoroughly wash and dry the inside of each canning jar. Spray the inside of each jar thoroughly with nonstick cooking spray. Set aside.
Scoop about 1/2 cups of cake batter into five small bowls. It doesn’t have to be perfect, don’t panic if you get a little more of less of one color than another.  Tint each bowl of cake batter with the food coloring until very vibrant.
Spoon about 3 tablespoons of the purple batter into the bottom of each jar.  Spoon equal amounts of turquoise batter, then green, yellow, and pink.  Place the jars in a shallow baking dish, add about 1/4″ in water in the baking dish. Place the baking dish in the oven and bake for 30-35 minutes.
Remove jars and allow to cool completely before scooping a small portion from the top of your cake and adding a hefty dollop of vanilla buttercream to the top. Sprinkle & serve, or 
cover with a lid and store in the fridge or pop into the mail & surprise someone you love!

PUFFY PEANUT BUTTER COOKIES WITH CHOCOLATE CHIPS


ingredients 
  • 2 cups all-purpose flour
  • 1/2 teaspoons baking soda
  • 8 tablespoons of salted butter, melted and cooled
  • 6 tablespoons of creamy peanut butter, melted and cooled
  • 1 cup brown sugar
  • 1/2 cup sugar
  • 1 egg + 1 egg yolk, at room temperature
  • 2 teaspoons vanilla extract
  • 1 1/2 cups chocolate chips


How to cook 



Preheat oven to 325 degrees F. Add butter and peanut butter to a microwave safe bowl, and heat in 30 second increments until melted. Let cool completely.
Mix the flour and baking soda in a bowl and set aside. In another bowl, mix the cooled butter/peanut butter and sugars until they are combined. Add the egg, egg yolk, and vanilla and stir until mixed. Gradually add flour and mix until a dough forms – it will look crumbly at first, but it will come together. I even used my hands to bring it all together. If necessary, add 1-2 teaspoons of milk, but I did not need this. Fold in chocolate chips.
Shape the dough into a ball the size of a golfball. Place on a baking sheet two inches apart and bake for 10-12 minutes or until the edges are slightly brown. The centers should be soft and puffy. Do not over bake. Let cool completely then dig in!
